Why can't we go redneck?

So I was looking at engines online and wondering why I couldn't buy a V12, bore it out, put a bigger camshaft in it, replace the pistons, etc. and swap it out for the 430. You know, like I did back in the day to the old Camero.

Is there something I'm not getting here? By my calculations, we're only pushing 262 Cubic Inches? What happened to getting 350 out of an engine? Are the aftermarket pistons not available? Would the changes screw up the consistant high speed abilities?

Why can't we go redneck on our cars? And I don't mean putting an American engine in it.... I'm talking about boring out a V-12 AMG. Is it just too damned complicated?

Someone enlighten me.
